Used extensively in Indian, Malay and Indonesian cuisine, Star Anise is a major component of garam masala. It is also an ingredient in traditional five-spice powder (Ngohoing) from Chinese cuisine. It is widely grown for commercial use in China, India, and most other countries in Asia.
Star anise is the seed pod from the fruit of the Illicium verumplant, an evergreen shrub native to Southwest China. It has a sweet, liquorice-like flavour, similar to aniseed.
It is recommended use is minimal as Star anise has a very strong, distinct flavour. Star Anise is considered a sweet spice, but it is used in savoury dishes, particularly with citrus, onions, poultry, cinnamon, nutmeg, and ginger. Add to slow simmer cooking, crockpots and stews. It should be removed upon serving. For a stronger flavour, grind it to a powder first - but use sparingly!
