Polenta is made from organically grown corn and has been traditionally used in Italian slow-cooked dishes. It is fine corn meal and when cooked by soft boiling, it turns into a soft creamy polenta.


To cook, add one cup of polenta to four cups of boiling water and a pinch of salt, stirring continuously and then let simmer for five minutes. Take it off the heat and fold in a knob of butter and/or grated parmesan cheese if desired. Polenta can be added to stews or slow-cooked dishes, as well as made into a paste to make crunchy corn-flavoured chips. Organic polenta can also be used in breakfast and dessert recipes, such as a tasty polenta porridge served with your choice of porridge toppings, or a polenta pudding with coconut milk and fruity flavouring. Polenta is a great wheat-free substitute for crumbing fish, vegetables and meat. It can also be used as a substitute for rice or mash; once you have cooked the polenta, rather than going through the process of baking it into polenta chips, simply serve it immediately as a nourishing and hearty meal accompaniment.
