This high protein index helps retain the elasticity of the pasta while cooking, and the appealing yellow colour. It is rich in quality gluten for firmness, and dried at low temperatures to preserve the raw materials. Orzo makes a great substitute for rice, or spaghetti to bulk out a meal and provide those carbs for busy lives!
To cook orzo, cover it in boiling water with a pinch of salt and cook for approximately 10 minutes, stirring occasionally to prevent it from sticking together. Drain your orzo then serve as quickly as possible for the best possible flavour and texture. Orzo is a wonderful base for pasta salads. Mix it through your choice of seasonal vegetables and top with a light, dressing for a delicious summer salad that is wonderful to share with guests at a potluck dinner or neighbourhood BBQ.
