Brown lentils are a nourishing and useful filler in many vegetarian and vegan recipes. Lentils provide high levels of protein and dietary fibre, but are very low in fat and sugar. Lentils will absorb flavour from the ingredients they are cooked with, and are a staple in crockpot one pots, stews and soups and Indian curries. They are a substitute for meat as they are nourishing and protein rich.
Lentils are best simmered until tender, 1 cup of lentils to 4 cups of boiling water. Cook for 20 minutes or put them straight into an all day crock pot.
