Made from millet grain this flour is gluten free. This flour has a delicious nutty yet sweet taste. and for some recipes you can reduce or completely cut out sugar. It has no chemical bleaching, no alcohol treatment, no additives, no anti-bacterial agents, no anti-fungal agents and no bromate added. It is a pale yellow colour and is suitable in many recipes.
A little millet flour added to bread recipes will make the final loaf of bread light and fluffy on the inside with a delicious crunchy crust. When used alone, millet flour is useful in recipes for pancakes and tortillas. It is often used in Eastern European porridge and baking of African unleavened bread, or Indian Roti.
Usually millet flour requires additional binding. It can also be used for thickening.
