Israeli couscous, also known as Jerusalem couscous or pearl couscous, is a type of pasta with grains about the size of small pearls. It is made from durum wheat which is then steamed. With it's subtle nut like flavour, and soft chewy texture, it is great added with dried fruits, nuts and needs, or as a base for a meal replacing rice or pasta. It is very low in fat and a good source of fibre, and complex carbohydrates.
Pearl Couscous has a larger grain than regular Couscous.
To prepare Israeli couscous, add about 1 ¼ cups water or vegetable broth for every 1 cup of dry couscous then cover the grains and simmer for about 10 minutes. Once cooked, the grains should fluff up lightly. For additional flavour from Israeli couscous, toast the grains in a little oil or butter before adding to water.
As well as a rice substitute, it also makes a great for making summertime salads go further and will provide a lovely creamy contrast to your fresh salad and veggies.
