Cocoa powder, in a smooth fine powder is made by alkalising cocoa nibs from whole cocoa beans. The beans are then roasted in a rotating drum and milled down into a fine powder. The powder is then pressed, defatted in a high pressure hydraulic press and milled once again. The powder has the characteristic cocoa flavour, medium brown colour making it suitable for many applications. In this way it is differs from cacao powder which is raw. While heat-sensitive nutrients are maintained in the production of cacao powder, cocoa powder is still a healthy option. This cocoa powder is organic, unsweetened and 10-12% alkalised.
