Intriguing nail-like shape makes a decorative garnish traditionally used to stud the Christmas ham. Cloves are regularly used in Asian, African, and Middle Eastern cuisine, lending flavour to meats and curry dishes, as well as fruit such as apples, pears or rhubarb.The taste is fruity but also sharp, hot, and bitter.
Cloves are included in many classic spice mixtures including Chinese five spice powder, curry powder, pickling spices and ground mixed spice for baking. Whole cloves are often used to flavour cooking liquids for simmering fish, poultry or meat, and as a garnish for baked hams (an absolute must for Christmas). Cloves have a particular association with apples and are added to apple sauces, tarts and other desserts.
