The word chia is derived from the Nahuatl word chian, meaning oily. It is an annual herb growing up to 1.75 metres. Chia is grown commercially for its seed, a food that is rich in omega-3 fatty acids, since the seeds yield 25-30% extractable oil, including linolenic acid (ALA Chia seeds are a rich source (>20% of the Daily value, DV)) of the B vitamins thiamine and niacin, and are a rich source of the dietary minerals calcium, iron, magnesium, manganese, phosphorus, and zinc. Chia seeds are also a good source (10-19% DV) of the B vitamins riboflavin and folate.
Chia Seeds are a highly supportive of efficient digestion and overall gut health, helping to keel you satiated between meals. When chia seeds come in contact with water, they expand to at least six times their size and form a gel-like consistency. This can be used to replace the egg content in many baking recipes.
Chia seeds have an abundance of uses in cooking and baking sweet and savoury foods. Flavoured chia pudding is a great breakfast option and can be prepared in advance and stored in glass jars in the fridge so you can grab and go on your way out the door. Chia seeds can also be combined with oats and other nuts and seeds to create this delectable Bircher Muesli, or add to breads, crackers, loaves, bliss balls and other baking. Jams, ice creams, the list goes on!
