Cardamom, sometimes cardamon or cardamum, is a spice made from the seeds of several plants in the genera Elettaria and Amomum in the family Zingiberaceae. Cardamom pods are spindle-shaped and have a triangular cross-section. The pods contain a number of seeds, but the entire cardamom pod can be used whole or ground. They have a strong, unique taste, with an intensely aromatic, resinous fragrance. A common ingredient in Indian cooking. It is also often used in baking. It is a common ingredient in Indian cooking and Scandi Baking.
Add cardamom as a sweet, warming flavour addition to curries, soups and stews. It is an absolute essential spice in curry powders, dahls and masalas. Cardamom also provides a lovely complementary spice to some sweet food and drinks. Use as full pods or grind into a powder using a mortar and pestle.
